Vinification method: Engineer-turned-winemaker Alie Shaper spent her first years post-graduation working in Silicon Valley. After many weekend trips to the California wineries surrounding the area, she discovered her passion for the wine industry. She returned to New York to work in hospitality, founding the tasting room and winery Brooklyn Oenology. She later relocated to Long Island to found the As If label.
For "Gratitude," the grapes were co-fermented on the Gewurztraminer skins. As fermentation was finishing, the wine was chilled to halt the process, pressed off the skins, settled, racked, bottled and capped. In the bottle, fermentation restarts, resulting in a sparkling "method ancestrale" pet-nat wine. No SO2 added, no further fining or filtering.
