Vinification method: The grapes are destemmed and fermented with native yeast and no sulfur. The Gewürztraminer macerates on the skins for around 18 days, giving it a lovely orange/pink hue. In a classic large Alsatian foudre, the wine was aged on the fine lees for 11 months before being bottled without the addition of sulfur. Unfined and unfiltered. The top natural wine producers in the world create brut wines, which were first produced for Barcelona's Bar Brutal.
