Producer information: Winemakers Daniela and Antonio De Gruttola seek out old vineyards in Irpinia, high in the hills of Campania. They champion and preserve the region’s native varietals, old vines and an age-old way of tending them.

Vinification method: "Olimpia," which we also call "crack juice," has grapes from old vines in the T’ara rà vineyard at 650 meters in elevation. It undergoes spontaneous fermentation with wild yeasts on the skins for 2 weeks in vats. The still wine is bottled the May following harvest with a little must from the same vintage to start a second fermentation”. Undisgorged, unfined, unfiltered.

Tasting notes: medium bodied, apple, peach, wildflowers, orange zest, smoke, saline + mineral finish - it has a little punch that makes it unforgettable

Pairing: salami, hard cheeses
