Vinification method: The Binner family has been making wine in the Ammerschwihr region of Alsace since 1770. The current family winemaker, Christian Binner, took over the domaine in 1999. He still farms the vines his grandfather planted in 1930. He constructed a special bioclimatic cellar to ferment and age his wines in the 2010s out of only local materials and natural shapes. And in keeping with his vineyards' biodynamic practices, his partner Michele uses grape seeds left over after pressing to make oil and cosmetics! 

Though all his wines are special, "Si Rose" is even more so. The name is a dark play on words - the French pronunciation of Si Rose is the same as cirrhosis, hence the liver present on the label. The wine is made from 50-year-old vines grown on calcareous soils. It is a blend of four vintages. Aged for 12 months in old centenary oak barrels. Unfiltered, unfined with  and no added So2.

Tasting notes: medium bodied, rosewater, lychee, pink grapefruit, nectarine skin

Pairing: Seafood boil, duck breast with jus and mashed potato
