Producer information: Donatus Wine is a family-run winery by Josef Leisser, Peter Michalík, and Eliška Leisserová, who released their first wine in 2018. We heard about the winery in 2022, started talking to Josef, and spontaneously invited them to our first Orange wine Fair in the same year. Along with the other Czech wines, such as Petr Marada and Nespor Rajsky, they were a standout at the first fair. Since we have been negotiating, we now carry their Pet Nat and Pálava exclusively in our store. We can't wait to visit their winery this harvest season.
Vinification method: Pálava is crossbreed of the Gewürztraminer and Müller Thurgau, developed in Moravia in 1953. The grapes for this particular wine come from two municipalities - Božice and Jaroslavice. This idiosyncratic Czech varietal was hand-harvested and macerated on the skins for 30 days before being transferred to neutral oak barrels. Bottled unfiltered, unfined, and no added SO2.
