Producer information: The Podere Pradarolo farm is located in the province of Parma. The farm was purchased by the Carretti family in 1972 and, since 1989, it has gradually been converted to produce wine, reviving a vocation that is now largely lost and consigned to the past. The driving force behind this work is Alberto Carretti. His choices have been both meticulous and bold: the production of organic grapes using only copper and sulphur, age-old winemaking methods and extended maceration processes for both white and red grapes, and autochthonous yeasts to produce healthy, long-lived and natural wines with an ancient, original flavour linked to the local terroir.
Vinification method: Organically grown, the Spergola grapes undergo 30 days of maceration in cement with native yeasts. Fermentation and aging takes place in concrete tanks, then refrigerated must is added for the second fermentation in the bottle in the spring, as per tradition. Unfined, unfiltered, no added SO2.
