As dictated by their philosophy, their work with wines is done at the time of the full moon, when the wine is at its peak and can fully express its potential. Since they only follow its development and do not monitor it artificially, the wine arrives on the market when it is ready and thus every vintage shows its character in its own moment.
Vinification: Hand-picked, beginning of October, with 30% botrytis on the grapes. Short maceration followed by spontaneous fermentation. The Muskat is aged for 24 months in large, used 500-liter barrels. Unfined, unfiltered, no addition of SO2.
