Producer information: After retiring from his career as a race car driver, Marco de Bartoli made the decision to reconstruct his family’s old cellar on his mother’s farm in Samperi, Sicily. His aim was to reinvigorate Marsala wine - a wine that had once been considered as rival to sherry and fallen to the status of cooking wine. Marco has since expanded into producing Passito wines on the Island of Pantelleria and dry red and white wines, all organic and using indigenous yeasts and with little to no additives or chemicals in the vineyards.
Vinification method: For "Integer," the Zibbibo grapes are hand selected in the vineyard, gently destemmed and softly pressed in order to start a spontaneous fermentation. A small part of the grape must ferments in old wood barrels and maceration on the skins lasts about 10 days, with no pumping over or punching down of the skins. The remaining must ferments in clay amphoras and goes on macerating on the skins for a few months. The wine then ages for about 10 months on its lees. No fining, filtering, or added S02.
