Vinification method: Markus Altenburger's approach to viticulture is "doing nothing if possible." They let grass and herbs grow between the rows to save the soil from drying out and do as little as possible to avoid stress on plants and soil. Their fields look different from the neatly trimmed and properly cut vineyards you might know from fancy advertisements. Bees, butterflies, and all kinds of beneficial species have started to return to the vineyards. They also don't use modern oenologic helpers like selected yeast, enzymes, bacteria, or finings.
The name 'Betont' translates as "emphasis," but it is also a play on the German word for concrete, Beton, in which the wine is aged. The grape Neuburger, a crossing of Roter Veltliner and Sylvaner, grows in Jois, Burgenland's limestone and schist soils. After destemming and 4 days of skin contact, this was native fermented in a concrete egg, where it remained for 6 more months before it was bottled. Unfined, unfiltered, with minimal added SO2.
