Producer information: Paraschos winery was started in the 1990s by Evangelos Paraschos. Evangelos was inspired by the famous wines of his neighbor Gravner he served in his family's restaurant, while also being lucky enough to own some vines that were nearly a century old - both on the Italian and Slovenian side of the border in Friuli Venezia-Giulia. The winery has since passed to sons Alexis and Jannis, who continue to use organic winemaking methods.
Vinification method: "Ribolla" comes from 100% Ribolla Gialla grapes, a varietal known for thriving in the region. Grapes are destemmed and left to macerate in big open-topped vats for 8 days on their skins. Only wild yeast is used, and no temperature control. After a light pressing, wines are racked to big Slavonian oak casks and left on the fine lees for 2 years, with occasional battonage (lees stirring) in the first few months. The finished wine is bottled unfined, unfiltered, and with 0 added S02.
