Producer information: Ploder-Rosenberg produces the Archaic wines made from amphoras based on their feeling. They search for the element of spirit in the wines. They are mostly fermented in qvevri. The process is very manual and based on the character of each element of the wine. Percentage as well as varieties may change between vintages. Also, it is not possible to make these wines every year (as they need to be the highest quality) so basically, they make amphora wines three to five times per decade.
Vinification method: Fermented on the skins in clay amphoras with 120 days of maceration. Every grape variety is fermented separately in amphora. Raised on fine lees for 5 months, then 23 months in amphora and acacia barrels.
Tasting notes: white peaches, under ripe raspberry, freshly grated orange zest
