Vinification method: The grapes are hand-harvested from a single 60-year-old plot on limestone and slate soils. They're then desemmed, fermented on the skins for 2 days in large old oak vats before being carefully pressed on a vertical press that is over 2 centuries old!
Matured for 2 years in old 500L barrels. Bottled unfined, unfiltered, no added SO2.
